Can a super healthy, nutrient packed meal be a hit during dinner?

With this recipe, of course it can!

Fresh spinach, maple walnuts, hard-boiled eggs, red onion, olive oil, and apple cider vinegar all offer a ton of vitamins and nutrients. The bacon and blue cheese are a naughty little extra but not necessarily unhealthy as long as you make sure you purchasing high quality natural bacon and cheese (uncured from pastured pigs, and no hormones or antibiotics from the cow’s).

This meal is quick, yet super fancy and is great as a date night dinner, or a gourmet meal to serve to friends and family. It tastes amazing and even my 2 ½ year old gobbled this down when I made it the other night. (we wrapped 1 candied nut in each piece of spinach and dipped it in the dressing for him). I guarantee you will love this!


Ingredients:

1 large sack of baby spinach
1/3 pound blue cheese, crumbled
1 pound of bacon, crumbled (uncured from pastured pigs)
1 recipe of candied nuts
3 hard boiled eggs, sliced (from pastured chickens)
½ of a large red onion, sliced

Dressing Ingredients:

½ cup maple syrup
½ cup olive oil
2 ½ tablespoons apple cider vinegar (un-filtered)
dash of sea salt to flavor


Directions:


Fry bacon on hot skillet until crisp. Crumble and set aside

Prepare your candied nuts. Set aside

Place eggs into boiling water for about 12 minutes then rinse, let cool, and slice. Set aside

Pour your spinach into a large bowl and add sliced red onions over top.

Assemble salad by placing spinach and onion on to plates or bowls (according to your preference) then add your desired amount of  the bacon, nuts and eggs, and cheese on top of each individual serving.

Prepare the dressing by warming maple syrup in a small saucepan. Pour the vinegar and oil into a mason jar then pour in warmed maple syrup and gently shake. Pour over salad and serve immediately.
