So the past few weeks we have felt great. Truly great. We had a few “cheats” here and here but not too many.

I still find myself very busy but in a good way, I love hard work when I am passionate about something. Meal planning, cooking, and my arch nemesis—- the kitchen mess that never seems to go away— occupies any and all of my free time during the days. (free time as in when I am not hanging with the little monkey boys ).

Nights are reserved for my husband, we are a bit obsessed with the TV show 24 and we like to have our Jack Bauer marathons after the boys go to bed. So nights = relax!



Breakfast:

1. We usually always eat a bowl of steel cut oatmeal (soaked overnight… why soak?) topped with coconut oil, some sort of fruit, cinnamon, and almond milk.
2. Lacto-Fermented “Ginger Ale”. This week I switched from ginger tea to ginger ale. The tea was great, but I wanted to try something new and with natural probiotics. I fermented a batch of ginger for a few days and wa la… ginger ale. Well, sorta. The end result was only slightly fizzy and way too strong for my tastes. But I found that when I add a little bit to my lemon water in the morning it was quite enjoyable. I also did the same for my boys in their sippy cups. My 18 month old loves it, my 3 year old gives me the thumbs down. I think I will stick with the ginger tea
3. Baked Oatmeal Cake…. Same recipe as last week, just new fruits, we LOVE this filling, nourishing breakfast!
4. Oat flour pancakes….. I tried to whip up a quick batch of my beloved power pancakes using oat flour instead of wheat flour. They were OK. I also could not use egg’s since my youngest son is allergic. So the end result was a little flat. But between me and my boys we ate them all gone (they couldn’t tell :)



Lunch:

I never plan out lunches. Many times we have left-overs and the times we don’t, we usually have things like sardine salad, garden omelets (for my non-egg allergic son), guacamole, or some sort of meat. These just happened to be some of the things we had this week.

1. Guacamole and leftover Mexican chili (2 thumbs up)
2. Homemade Hummus with homemade oat flour crackers (1 thumb up, the hummus was not as flavorful as I hoped and the crackers were too crumbly)
3. Honey Nut Granola Cereal with Almond Milk (2 HUGE thumbs up, love this, same as the honey nut granola bar recipe but we eat it as cereal for quick breakfast’s or lunches).
4. Guacamole and Chicken on top of Rice Flour Toast (2 thumbs up from the boys)
5. Leftover Mexican Chili made into a taco (yes I cheated and used a flour tortilla, but it was a quick and delicious lunch)



Snacks:

This is the fun part! But also the most time consuming. I love planning out healthy, homemade snacks for my kids. For this week we did the following: (all dairy, flour, and refined sugar free). It seems like I make lots of snacks, but we only eat small amounts at a time and we often have left-over’s for the next week.

1. Homemade Mint Chocolate Chip Ice Cream. (2 HUGE thumbs up) Wow this is good! I used this recipe but added a small handful of spinach to give it a green color, it was like magic, and I swear you cannot taste the spinach)
2. Almond Joy Bars. (2 thumbs up, although the boys seemed to eat the chocolate part and leave the coconut part behind)
3. Tropical Popsicles (2 thumbs up)
4. Stovetop popcorn, popped in coconut oil, and sprinkled with sea salt and onion powder (2 thumbs up) Also a favorite of my husbands.
5. Our daily Kale/Berry Smoothies (2 thumbs up)
6. Raw Nourishing Chocolate Pudding (2 thumbs up)
7. Fruit Roll Ups (My boy’s all time favorite snack…… healthy, no mess, and easy to make large batches so you always have them on hand)
8. Double Chocolate Muffins (2 thumbs up)
9. Homemade veggie dip (2 thumbs up)
10. Fresh fruit and vegetables for snacking



Dinner:

1. Rosemary and Lemon Crusted Chicken (an old favorite of ours)
2. Decked Out Spinach Salad with Warm Maple Dressing (another old favorite and so amazingly delicious)
3. Teriyaki Chicken (My husband liked this, and it was pretty easy. I always buy whole chickens so I can use the bones for making homemade stock. I served this over rice)
4. Sloppy Joes in a Bowl (never actually made this one, we had left-overs, but it looks yummy)
5. Crock Pot Chicken Taco Chili (Loved this. This was packed with nutrients and pretty quick to make. I made a HUGE batch and froze some for quick lunches. We ate this plain and we ate this in tortilla shells with guacamole, YUM, will make this again)
6. Salt and Pepper Steaks and Basil Potato Salad (simple T-bone steaks, although I did not make any dipping sauce this night, this recipe is for my FAVORITE dipping sauce for steak)
7. “Catch Day”. I always set aside 1 day for left-overs or something quick.
