Our flour/dairy/refined sugar/processed food elimination diet is still going strong! Yes, a few more cheats for me and my husband this week, but not too many.
It usually will be a bit of cheese or sour cream here or there. And I will admit we did order a pizza one night (as good as it was, we felt over-stuffed and terrible afterwards).
It’s true, when they say the less “junk” you eat, the less you crave it. And besides, I don’t feel at all restricted. If I am craving sweets, salt, or something hearty, I just make it…… simple as that. And the best part is that when I make it, it is usually a lot healthier than anything I would buy pre-packaged in the store.
Well here is our Week 3 Meal Plan. Breakfast never changes too much, and lunch is usually leftovers, but we had some WONDERFUL snacks, desserts, and dinners this week.

1. We usually always eat a bowl of steel cut oatmeal (soaked overnight… why soak?) topped with coconut oil, some sort of fruit, cinnamon, and almond milk.
2. Back to my morning Ginger Tea (see post here)
3. Oatmeal Cake…. Same recipe as last week, just new fruits, we LOVE this!
4. Protein Packed Pancakes……. These are so addicting, I made a huge batch last weekend, so we had batter on tap all week. (Note, I doubled the honey and “fried” them in coconut oil to make them crispy)

Lunch:
I never plan out lunches. Many times we have left-overs and the times we don’t, we usually have things like sardine salad, garden omelets (for my non-egg allergic son), guacamole, or some sort of meat. These just happened to be some of the things we had this week.
1. Not our normal, but I bought some rice flour bread and some Daiya (non dairy) cheese this week. It is a bit pricey, but it makes great grilled cheese and tomato sandwiches. A rare delicacy for my boys.
2. Taco’s (yes that was a flour tortilla in the picture, a small cheat for me this day)
3. Paleo Pumpkin Bread ( This was a great recipe, my husband was not the biggest fan, but me and my boys loved it, next time I will double it since it only made a tiny loaf)

Snacks:
This is the fun part! But also the most time consuming. I love planning out healthy, homemade snacks for my kids. For this week we did the following: (all dairy, flour, and refined sugar free). It seems like I make lots of snacks, but we only eat small amounts at a time and we often have left-over’s for the next week.
1. Homemade Peanut Butter Cups (2 HUGE thumbs up!! We used sun night butter due to allergies)
2. Raspberry Lemonade Popsicles (2 thumbs up, we used Santa Cruz Organic Juice)
3. Old Fashioned Vanilla Bean Custard (2 HUGE thumbs up. My 3 year old goes crazy for this. Even his preschool teacher made a comment that he was so excited when we saw this custard in his lunch, me and my husband are also addicted)
4. Stovetop popcorn, popped in coconut oil, and sprinkled with sea salt and onion powder (2 thumbs up) Also a favorite of my husbands.
5. Our daily Kale/Berry Smoothies (2 thumbs up)
6. Salted Pecan Sandies (1 thumb up. Me and my boys liked these, my husband did not)
7. Fruit Roll Ups (My boy’s all time favorite snack…… healthy, no mess, and easy to make large batches so you always have them on hand)
8. Pumpkin Custard (2 thumbs up.) We went a little “custard overboard“ this week, we did not like this as much as our Old Fashioned Vanilla Bean Custard, but it was still really really good!)
9. Strawberry Coconut Milk Yogurt.(2 thumbs up, I used to make a lot of dairy yogurt at home but this is one of my favorite recipes for coconut milk yogurt. I would love to have this always on tap, but the kind of coconut milk we use is a bit pricey)

1. Chipotle Fish Tacos (2 HUGE thumbs up). These were def. the BEST fish taco’s I have ever had. I used this recipe as a base, but I changed it up quite a bit. I will post the recipe on my site as soon as I can.
2. Leon Salad (2 thumbs up). We liked this, but it ended up not being as filling as I hoped for.
3. Mexican Lime Soup. (1 thumb up). I added some bell peppers for added nutrition, but I was out of avocado’s this day and we did not use sour cream or cilantro, so it was “missing” something. But normally, I bet this would be super good.
4. Tacos (2 thumbs up) We do LOTS of Mexican. There is no recipe for these, just fresh pastured beef, seasonings, organic diced onions and peppers, corn tortillas, and homemade salsa and guacamole to garnish)
5. As I mentioned above, we were bad and ordered a pizza after the boys went to bed
6. Pineapple Chicken Kabobs (arg, these are probably so good, but I am having a bad week. I began making this earlier in the day and me and the boys ended up eating all the bacon. I know…. I know. Anyway, It turned more into Pineapple and Shredded Chicken, which none of us were too fond of. I think I will try to make this recipe again next week and exercise more self control over the bacon
