This is my mom’s famous Power Pancake recipe. You definitely don’t need Bisquick to make delicious fluffy blueberry pancakes. It really doesn’t take much more time either. We eat pancakes almost every week, sometimes for breakfast, sometimes for quick dinners, and sometimes just as a quick snack for my toddler. I think once you try this recipe and truly have homemade blueberry pancakes off the skillet I don’t think you will want to go back to Bisquick ever again!
* 2 ½ cups whole wheat flour
* 2 tsp baking powder (aluminum free)
* 1 tsp baking soda
* ¼ tsp sea salt
* 2 ½ cups milk, buttermilk, or coconut milk
* ½ cup oats
* 2 large eggs (pastured)
* 1 tb butter or coconut oil
* 1/3 cup slivered almonds
* ½ cup fresh blueberries (organic)
* 1 tsp vanilla
In a large bowl, whisk the eggs then add the rest of the ingredients (except the blueberries).
Heat a large buttered skillet over medium heat and pour about 3 tablespoons of batter onto skillet to form a pancake. Repeat forming only as many pancakes as can fit on the skillet. Drop a few blueberries on each pancake.
Cook until bubbles form on the pancake surfaces then flip and cook other side until browned. Serve and top with more butter and pure maple syrup or raw honey.
