This year we have officially become a dairy and gluten free family. This is due to my oldest being intolerant to dairy, soy, and gluten, and my middle child being downright allergic to dairy.
But I have to say, the change in our diet has really made us all fee quite a bit better! Knowing what we know now, I would definitely be dairy and gluten free even if my kids did not have food issues.
Anyway, I found this recipe on an awesome blog, Real Food, Allergy Free. Who would have guessed that you can make a pancake out of Navy beans, oats, and honey and have them taste like a deliciously sweet pancake. We love them so much I bet I have made about 20 batches of them in the past few months!
HERE is the recipe, although, I do add an extra TB of honey to my batter to make it extra sweet because my boys eat pancakes in their hands like a piece of bread with no maple syrup. I also like to "fry" them in a bit of coconut oil in a skillet so they turn out crispy.
